Even though it is not healthy, fried foods and dishes prepared by frying carry a lot of weight in Turkish cuisine. Even the nutritionists who say “I live healthy” admit that they have potatoes, peppers, eggplant fries at least several times a year.
At public level, fried food is consumed once or twice a week. Ladies who are meticulous about nutrition, renew the frying oil every time as they do not want to risk their family’s health. 1.5 tons of oil is consumed annually in Turkey. Approximately 10 kilos of frying oil is discharged from every house. One liter of used oil makes 1 million liters of drinking water, in other terms one year’s water supply for 15 people, undrinkable. 25% of waste water pollution consists of used vegetable and animal oils. When untreated water is poured into seas, lakes and streams, the water is polluted and the oxygen in the water decreases. Thus, other creatures, especially fish, are either dying or exposed to serious destruction. When the used oils are poured into the sink, they are plastered into the drain system, causing the wastes inside the sewer pipe to stick and the pipe get narrower over time.
